SLOW MORNING PANCAKES

For slow Sundays, post-class mornings and days when breakfast deserves a little more time.

YOU’LL NEED

  • 30 g oat flour
  • 20 ml plant-based milk
  • 2 eggs, separated
  • 1 tbsp honey, optional
  • ½ tsp baking powder
  • Fresh fruit, to serve

HOW TO MAKE THEM

  1. Separate the egg whites from the yolks.
  2. Mix the yolks with the plant-based milk and honey, if using.
  3. Add the oat flour and baking powder and mix until smooth.
  4. In a separate bowl, whisk the egg whites until light and fluffy.
  5. Gently fold them into the batter, taking care not to overmix.
  6. Heat a stainless steel, cast iron or PFAS-free ceramic pan over low to medium heat.
  7. Spoon small rounds of batter into the pan.
  8. Cook for around 2–3 minutes, until bubbles begin to appear and the edges start to set.
  9. Flip and cook for another 1–2 minutes.
  10. Stack the pancakes, add fresh fruit and finish with a little honey if you want something sweeter.
