OAT FLOUR CHOCOLATE CHUNK COOKIES

Soft in the middle, full of chocolate and best eaten while they’re still a little warm.

Makes: approximately 10–12 cookies

YOU’LL NEED

  • 180 g butter, softened
  • 1 cup coconut sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 2 cups oat flour
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 125 g dark chocolate, roughly chopped

HOW TO MAKE THEM

  1. Add the softened butter and coconut sugar to a large bowl.
  2. Mix until creamy and well combined.
  3. Add the egg, egg yolk and vanilla extract.
  4. Mix again until smooth.
  5. Add the oat flour, baking powder and salt.
  6. Mix gently until a cookie dough forms.
  7. Fold in the chopped dark chocolate, keeping a few pieces aside for the tops.
  8. Cover the dough and refrigerate for 30 minutes.
  9. Preheat the oven to 180°C.
  10. Line a baking tray with baking paper.
  11. Divide the dough into approximately 10–12 balls and place them on the tray, leaving enough space between each cookie.
  12. Add the remaining pieces of chocolate on top.
  13. Bake at 180°C for approximately 12 minutes.
  14. The centres may still look slightly soft when they come out of the oven.
  15. Leave them on the tray for a few minutes before moving them to a cooling rack.

BEST SERVED A LITTLE WARM.
