SLOW MORNING PANCAKES
For slow Sundays, post-class mornings and days when breakfast deserves a little more time.

YOU’LL NEED
- 30 g oat flour
- 20 ml plant-based milk
- 2 eggs, separated
- 1 tbsp honey, optional
- ½ tsp baking powder
- Fresh fruit, to serve
HOW TO MAKE THEM
- Separate the egg whites from the yolks.
- Mix the yolks with the plant-based milk and honey, if using.
- Add the oat flour and baking powder and mix until smooth.
- In a separate bowl, whisk the egg whites until light and fluffy.
- Gently fold them into the batter, taking care not to overmix.
- Heat a stainless steel, cast iron or PFAS-free ceramic pan over low to medium heat.
- Spoon small rounds of batter into the pan.
- Cook for around 2–3 minutes, until bubbles begin to appear and the edges start to set.
- Flip and cook for another 1–2 minutes.
- Stack the pancakes, add fresh fruit and finish with a little honey if you want something sweeter.
