OAT FLOUR CHOCOLATE CHUNK COOKIES
Soft in the middle, full of chocolate and best eaten while they’re still a little warm.

Makes: approximately 10–12 cookies
YOU’LL NEED
- 180 g butter, softened
- 1 cup coconut sugar
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
- 2 cups oat flour
- ¼ tsp baking powder
- ¼ tsp salt
- 125 g dark chocolate, roughly chopped
HOW TO MAKE THEM
- Add the softened butter and coconut sugar to a large bowl.
- Mix until creamy and well combined.
- Add the egg, egg yolk and vanilla extract.
- Mix again until smooth.
- Add the oat flour, baking powder and salt.
- Mix gently until a cookie dough forms.
- Fold in the chopped dark chocolate, keeping a few pieces aside for the tops.
- Cover the dough and refrigerate for 30 minutes.
- Preheat the oven to 180°C.
- Line a baking tray with baking paper.
- Divide the dough into approximately 10–12 balls and place them on the tray, leaving enough space between each cookie.
- Add the remaining pieces of chocolate on top.
- Bake at 180°C for approximately 12 minutes.
- The centres may still look slightly soft when they come out of the oven.
- Leave them on the tray for a few minutes before moving them to a cooling rack.
BEST SERVED A LITTLE WARM.
